The Health Benefit of Eggplant
Eggplant contains antioxidant (anthocyanin and nasunin) that existed in eggplant’s skin. Those antioxidants have function in protecting cell from free radicals. Like other vegetables, eggplant is low calorie but high contained of fiber. Therefore, this type of vegetable can be consumed during weight loss program. Fiber in eggplant is high, about 2.47 grams per 100 grams eggplant. High fiber food is good for our body and has important benefit especially in digestive system & heart, stabilizing blood sugar, full effect stay longer, and decreasing degenerative disease risk.
Eggplant is one of nightshade family vegetables with tomato, capsicum, potato, etc. That vegetable category generally is high fiber and contains alkaloids (acts as antioxidant). However, in some people, for example people with autoimmune and arthritis, they need to limit nightshade family vegetable including eggplant, it is needed to make them stay healthy.
