Grilled Food and New Year
Hi Friends of SlimGourmet! It's not complete to welcome a new year 2019 without a party. The food menu that is commonly processed when welcoming the new year is grilled foods such as corn, beef, fish, sausages, chicken, seafood, peppers, onions, etc. However, is it safe to consume foods that are grilled for health?
All types of food processing have an impact on health. A wise thing is to choose the type of processing that has a minimum risk for health. Foods that are grilled are better foods than fried foods (deep frying). However, grilling/roasting processes also have an impact on health, what is that?
Grilling techniques have the potential to produce carcinogenic free radical molecules such as poly aromatic compounds (HPA) and heterocyclic amines. According to some results of research on side compounds resulting from the process of grilling/cooking food, especially foods rich in fat and protein (such as meat, sausages, fish, etc.) can endanger health because of the many free radicals that are formed and consumed by us. The impact of diseases that are common due to free radicals such as cancer, diabetes, kidney failure, premature aging. These health effects appear after an annual and are accumulative.
This does not mean we should not consume grilled/roasted foods but we need to do several techniques to reduce the content of free radicals in grilled/roasted foods such as marinate food ingredients that will be grilled with spices such as turmeric, ginger, galangal, red onion, garlic, lime and other herbs. These spices contain antioxidants which can reduce free radicals in grilled/roasted foods. Consuming pickles (cucumber, chili, and red) and other vegetables is highly recommended to increase antioxidant intake while consuming grilled/roasted foods.
